Lemon Chicken with Gordal Olives from Spain Recipe

I’m going to let you in on a little secret about me: I LOVE OLIVES FROM SPAIN! I have ever since I was a little girl. I can remember filling bowls with olives rather than chips or popcorn for movie snacks! Or really just eating them right out of the jar for a delicious little snack throughout the day! I just really love olives from Spain!

Apart from their amazing flavour, part of the reason why I love olives so much are the health benefits that they contain. They are rich in healthy fats and contain loads of antioxidants, which make them part of heart healthy diets. They are low in calories and are loaded with minerals such as calcium, iron and magnesium, to name a few.

Olives from Spain are so versatile and that’s why I think they are great to not only have on hand for snacks but to also include in your weekly cooking!

Recently, MissFresh, a ready-to-cook meal subscription service, sent me three different meal kits, all with pre-portioned ingredients and the recipes to be able to make in no time flat, which includes three different variety of olives from Olives from Spain and healthy recipes for each variety. The varieties included Hojiblanca olives, Gordal olives and Manzanilla olives, all from Spain.

MissFresh has collaborated with Olives from Spain to create three amazing recipes that are perfect for the busy family and today I want to share the lemon chicken recipe with you. The other two can be found here: Sea Perch with Black Hojiblanca Olive Vinaigrette and Oven Baked Cod.

Oh man, is your mouth not watering or what?! I can’t wait to make this dish again for my family! So easy, quick to make and healthy for a busy family on the go!

    Love & Blessings,
